Ingredients:
Burrito sized tortilla or wrap
1/2 cup grated Jack cheese
1/2 cup shredded iceberg lettuce
1/2 small yellow onion sliced
1/2 red bell pepper sliced
Thinly diced up meatloaf
1 tbsp olive oil
Sriracha sauce
1 tsp prepared horse radish
2 tbsp Greek yogurt
1 tsp Heinz 57
Salt, pepper, garlic blend seasoning
Cooking Instructions:
Slice onion and bell pepper and shred lettuce. Dice up meatloaf (Perfect for leftover meatloaf). Mix Greek yogurt, horse radish and Heinz 57 in a small bowl and put aside for later. Preheat pan for 3 min on med heat and add tbsp olive oil followed by sliced onions and peppers (season with salt, pepper, garlic seasoning); saute for about 5 min. Move onions and peppers to side in pan and add in meatloaf, breaking up in the pan with spoon. After a couple of min mix onions, peppers and meatloaf together then add in the shredded cheese and cook until melted. Warm a tortilla/wrap on gas stove or in pan. Add a couple spoon fulls of Greek yogurt/horse radish mix to tortilla followed by meatloaf/cheese/onions/peppers mix, then top with shredded lettuce and Sriracha sauce. Wrap up and enjoy!
