Pan-Seared Filet Mignon w/ Mushroom Red Wine Sauce

Ingredients:

Filet Mignon (4 steaks)
Red Wine
Shallot
4 cloves of garlic
Black pepper
Kosher salt
Avocado Oil
Fresh Thyme
Fresh Rosemary
Baby Bella Mushrooms
1 stick of unsalted butter
Beef Broth (Optional)


Cooking Instructions:
I'm making 4 filets for this recipe. Take your filets out of the fridge and let them come to room temp for about 20-30 min before you begin cooking. Begin by trimming any excess hard fat or silver skin off of the filets (may not be necessary depending on your filets). Pat filets dry with paper towel and add a little bit of avocado or olive oil to the filets to act as a binder for your seasoning. Add salt and lots of pepper to the filets on both sides and the edges. Remove the skin off of 4 cloves of garlic and have about 5-6 sprigs of rosemary and a handful of fresh thyme. Finely dice up one shallot and put aside for the sauce. Clean mushrooms by wiping off with a towel then slice them all up. In a nice thick-bottom pan preheat your pan on medium-high heat for about 3-4 min. Add in about 1-2 tbsp of avocado oil to hot pan and lay down your filets. Sear for about 2 min then flip. Add a few tbsps of butter, the rosemary sprigs, thyme, and garlic. Baste the filets to keep them nice and moisturized. Continue cooking for another 2-3 min. I like my steaks medium rare so check your internal temp with a quick read thermometer (about 135 deg F). If you like your steaks more well done just cook a bit longer checking with your thermometer until you reach your desired temp. Remove steaks with all herbs and garlic and let them rest. In the same pan add in diced shallot and sliced mushrooms on medium heat and saute them down for about 4-5 min. Add salt and pepper to taste to your mushrooms. Add in about a half a cup of red wine and the steak resting juices and reduce for a couple mins. Add in about 1/4-1/2 cup beef broth if you feel you need more sauce then add a couple tbsps of cold butter and continue reducing for a few more min. until the sauce thickens just a bit. Plate your filet and spoon over the sauce with mushrooms and enjoy!
