Ingredients:
Rotisserie Chicken shredded
Oaxaca cheese grated
Red and Green enchilada sauce
Canned jalapeƱos
Sliced black olives
Flour and corn tortillas
Diced cilantro for garnish
Sliced avocado
Cooking Instructions:
Begin by removing skin and shredding a rotisserie chicken. Grate the Oaxaca cheese and set aside. Pour the enchilada sauce in a dish and dip tortillas in the sauce (You can choose which color sauce to use and corn or flour tortillas), then fill with shredded chicken and grated Oaxaca cheese and place in a 9x13 oven safe dish or pan that has enchilada sauce poured in the bottom. Once the dish is filled with enchiladas top with more shredded cheese, sliced black olives and diced jalapenos. Put in 350 deg F preheated oven for about 30 min until cheese is slightly golden and melty. Top with a little diced cilantro, sour cream, guacamole, and hot sauce and ENJOY!
