Ingredients:
Chicken breast brined overnight in pickle juice
Provolone cheese slices
Red onion sliced in rounds
Brioche Buns
Iceberg lettuce
Unsalted Butter
Avocado oil
Kinder’s Salt, Pepper, Garlic seasoning with paprika added
Pickle chips
Sauce:
1/2-3/4 cup mayo
1 tbsp Frank’s Red Hot Buffalo Sauce
Squirt of fresh lemon juice
1/2 tsp Kinder’s salt, pepper, garlic seasoning with paprika added

Cooking Instructions:
Begin by marinating the chicken breasts in pickle juice overnight by placing chicken in a ziplock bag and simply pouring pickle juice in, then put in fridge. Make the sauce by putting mayo, Frank's redhot sauce, a squeeze of lemon, and 1/2 tsp of the salt, pepper, garlic, paprika seasoning in a bowl and mix; Cover and put in fridge while you make the rest. Next, pound out your chicken breasts with a meat mallet so that they are all even thickness. Apply avocado oil as a binder on the chicken then season with the salt, pepper, garlic, paprika seasoning. Pull apart your iceberg lettuce into sandwich sized pieces. Slice the onion into thick rounds and lightly coat with avocado oil. Melt the butter in the microwave and apply to the brioche buns. Place your chicken and onion rounds on a preheated grill on medium heat. Grill for about 4 minutes and flip chicken and onions. Cook for another 3-4 minutes until the internal temp reaches 160 deg F (you want to reach 165 deg F internal and that will happen as the chicken rests. Remove the onions as well. Add the buttered buns for about 1 minute and grill the cut sides then remove. Right after you take your chicken off the grill, place the provolone cheese on each piece of chicken and let it rest; the heat from the chicken will melt the cheese. After your chicken rests for about 5 minutes it is time to build the sandwich. Take a bun and add some sauce on the bottom bun, then pickles, then lettuce, then chicken with melted cheese, then grilled onions, then top with a little more sauce and put the top bun on. Take a bite and enjoy!
