Ingredients:
One box of spaghetti
One 28 oz can of Cento San Marzano Tomatoes
10 ounce package of cherry tomatoes cut in half
One medium yellow onion diced
3-4 cloves of garlic chopped
1 bunch of Chinese long beans (green beans)
Olive oil
Fresh grated Pecorino Romano Cheese
Kosher Salt
Fresh cracked Black Pepper
Beef stock or wine (optional)
Cooking Instructions:
Begin by chopping garlic and dicing onion. Cut all the cherry tomatoes in half and slice Cento San Marzano tomatoes into chunks/quarters. Slice Chinese long beans into 4-5 inch pieces and rinse in a strainer. Preheat a large pan on medium for a couple minutes then put a good amount of olive oil in the pan and saute the onions for about 4-5 minutes then add in the garlic for about a minute and season with salt and pepper to taste. Pour in a half a cup of beef stock or wine and cook down for a couple minutes then pour in all the tomatoes and add some more salt and pepper. Simmer for about 20 minutes. Boil a pot of salted water and add in the green beans. While the green beans are boiling add some olive oil on top of the tomato sauce, cover, and put heat to low. Once the green beans are al-dente, strain and stir in to the sauce. Cook for another 2-3 minutes and plate. Grate some fresh pecorino romano cheese and fresh cracked black pepper on top and enjoy!
