Ingredients:
Eggs (I used 8 which makes about 4 burritos plus a little splash of milk)
Bacon (6-7 slices)
Breakfast Sausage (I used 8 sausages for 4 burritos)
Frozen Tater Tots (25-30 tots for 4 burritos)
Grated cheese (I used cheddar, but pepper jack would be great too)
Burrito sized Tortillas
Your favorite hot sauce or salsa
Cooking Instructions:
Start by frying up some bacon and breakfast sausage. When done remove and set on paper towels and keep that rendered fat in the pan. On medium heat add in frozen tater tots and cook in the bacon and sausage grease until crispy then remove from the pan. Beat some eggs with a little splash of milk, add in a tablespoon of butter and cook those eggs until nice an fluffy. Season with a little salt and pepper at the end. Warm a tortilla and add the bacon, sausage, tater tots, eggs and a sprinkle of cheese. Role up the burrito and crisp it up starting on the seal side first. Enjoy it with your favorite hot sauce or salsa.
