Ingredients:
1 lb lean ground beef
1 tbsp avocado oil
1/3 cup thin sliced carrot
1/2 red onion diced
3 green onions sliced
1/2 tsp kosher salt
1/2 tsp black pepper
1 10 ounce bag of cauliflower rice (two bags would be better but that’s all I had)
2 tbsp unsalted butter
1/2 cup frozen peas
3 cloves of garlic chopped
2 eggs
3 tbsp low sodium soy sauce
2 tbsp hoisin sauce
Sriracha sauce to your liking
Sesame seeds to your liking
1 tsp sesame oil
Cooking Instructions:
Start with a tablespoon of avocado oil in a medium high heat pan. Drop in a pound of lean ground beef. After a couple of minutes, add in a handful of thin sliced carrot, half of a diced red onion, and the sliced white part of three green onions. Stir it all up and add a pinch of kosher salt and fresh black pepper. Sauté for about 2 minutes then move to the side and add a bag of frozen cauliflower rice; spread it out, throw in a tablespoon of butter and cook for another 3-4 minutes. Add in about half a cup of frozen peas and mix it all together. Throw in three cloves of diced garlic. Make a well and drop in a tablespoon of butter followed by two eggs. Scramble in the pan then mix. Add about 3 tablespoons of low sodium soy sauce, two tablespoons of hoisin sauce, Sriracha sauce to your liking, sprinkle of sesame seeds, and about a teaspoon of sesame oil. Mix together and finish cooking for another minute or so. Put in a bowl and top with sliced green onion, sesame seeds and a little more Sriracha sauce. This came out delicious for simply cleaning out my fridge. I think a second bag of cauliflower rice would add a little more contrast but this gets the thumbs up!
