Ingredients:
Avocado Salsa Recipe:
In a blender combine:
Half an Avocado
1 Serrano pepper with seeds if you want it spicier
Small handful of Cilantro
1 Garlic clove
1/3 of an onion
1 tbsp of avocado oil
1 teaspoon red wine vinegar
juice from half a lime
Pinch of salt and pepper
Splash of water (add as much or as little as you like for consistency)
Blend it all up until smooth and enjoy!
Cooking Instructions:
Slice leftover tri-tip into smaller pieces and saute in a medium heat pan, I like to add a little SPG, cumin and chili powder. Fry up a corn tortilla and assemble. Sprinkle on a little Oaxaca cheese and some of my amazing avocado salsa. Finish with some onion, cilantro and a squeeze of lime. These were ridiculously delicious, I could literally eat like 10 of these if I really let go.
