Ingredients:
Chicken Marinade:
2 Chicken Breasts diced into cubes
1-2 tbsp SPG
10-12 ounces of Tzatziki (I used Haig’s Delicacies brand from Costco which came in a 2-pack)
Marinated Veggies:
1 Red Onion Sliced
2 Garlic Cloves Crushed
1-2 Roma Tomatoes Diced
1/2-1 Cucumber De-Seeded and peeled sliced
1/2 cup Extra Virgin Olive Oil
1/2 cup Red Wine Vinegar
1 tbsp SPG
Squeeze of Lemon
Other Ingredients:
Pita Bread
Feta Cheese
Romaine Lettuce diced
Cooking Instructions:
In a bowl, add sliced red onion, crushed garlic cloves, diced Roma tomatoes, De-seeded cucumber, some with skin on and some peeled, olive oil, red wine vinegar, SPG, and a squeeze of lemon. Mix well, cover and put in fridge for at least 2 hours. Slice up two chicken breasts into cubes, put into a ziplock bag, add SPG, and an entire container of this tzatziki I found at Costco. Massage it all up and into the fridge for at least 4 hours. After 4 or so hours, skewer the chicken and grill it up with a little char. Warm up a pita, add some fresh tzatziki, kabob grilled chicken, the marinated veggies, crumbled feta cheese, romaine lettuce and a little more tzatziki. Fold it up and look at this guys, my mouth is watering! This was so good and easy to make, you have to try it!
