Ingredients:

12 ounce bag of frozen corn, thawed
1 tbsp unsalted butter
1 tbsp avocado or olive oil
Fresh lime juice
1 tsp Tajin
1 tsp chili powder
1 small pinch of salt (be careful with salt because the cheese is salty)
1/2 tsp black pepper
Small handful of diced cilantro
2 stocks of finely sliced green onion (just the green section)
1 heaping tbsp of mayo (You can adjust to your liking)
Crumbled queso fresco or cotija cheese to your liking


Cooking Instructions:
Add a tablespoon of butter and avocado oil to a preheated pan on medium. Pour in a 12 ounce bag of thawed frozen corn. Stir in the butter and oil and saute until lightly browned. Add to a mixing bowl and squeeze on some fresh lime, add a teaspoon of Tajin, teaspoon of chili powder, pinch of salt, half teaspoon of pepper, small handful of diced cilantro, two stocks of finely sliced green onion, a heaping tablespoon of mayo and some crumbled queso fresco or cotija cheese. Mix it all up and serve as a delicious side dish.
