Tri-tip
Pappy’s seasoning
Cooking Instructions:
Trim tri-tip leaving about a 1/2 inch of fat on bottom. Rub with avocado oil as a binder then add your favorite seasoning/rub. I like Pappy's. Let seasoning soak in for about 20 min. Preheat your smoker/oven to 225 deg F. Cook to 130-135 deg internal med rare or 140-145 for med. Remove from smoker/oven and place meat side down on a medium high grill for about 2-3 min or until nicely charred or grill marked. Flip onto fat side and grill for about 1-2 more min watching closely for flare ups. Remove from grill and rest for 20 min. Slice against the grain and serve.
