Ingredients:
2 Chicken Breasts halfed and butterflied
Bachan’s Hot and Spicy Japanese BBQ Sauce
Pepper Jack Cheese slices
Kinder’s SPG
Avocado or Olive Oil
Brioche Buns toasted
Mayo
One Red Onion sliced in rounds
Fresh Pineapple sliced in rounds and cored
Bacon slices (optional)
Cooking Instructions:
Your going to start with Bachanโs Hot and Spicy. Marinate chicken in a ziplock bag in the fridge for at least an hour. Slice fresh pineapple into rounds. After marinating, season the chicken with SPG on both sides. Toast some brioche buns until crispy on both sides. Lay your chicken in a hot grill pan on medium high heat and get a good char on one side then flip and lay down some sliced pepper jack cheese and finish grilling the other side. In another pan add in a little avocado oil and grill up a red onion, donโt forget to hit them with a little SPG and throw those pineapple rounds in too. Add a little of that Japanese BBQ Sauce to the onions and continue cooking until caramelized. Spread a little mayo on the buns, lay on your chicken, be generous, then that grilled pineapple and top with those caramelized onions with a little more hot and spicy Japanese BBQ sauce. Guys this was so freakin good, you have to make this one for your family!
