Ingredients:
Baby red potatoes
Kosher salt for the boiling water
Garlic salt to taste
Black pepper to taste
1/4-1/2 cup heavy cream
4 tbsp unsalted butter
1/4 cup grated
Pecorino Romano cheese grated
1 tbsp Kosher salt (for the boiling water)
Cooking Instructions:
Add red potatoes to pot and add cold water about an inch above potatoes. Add in about a tbsp of kosher salt to water and begin boiling. Boil potatoes until fork tender (about 20-25 min). Strain potatoes and let slightly cool for 2 min. Use a ricer and begin ricing the potatoes into a large mixing bowl adding as much of the skin as you want. Melt your butter. Add the rest of the ingredients in the bowl and stir together until incorporated. Serve and enjoy!
