Ingredients:
2 chicken breasts finely diced
Sour cream or Greek yogurt
White corn tortillas
Sliced Avocado
Sliced serrano or jalapeno pepper
Diced red onion
Diced tomato
Shredded lettuce
Grated pepper jack cheese
Tapatio hot sauce or your favorite
Avocado oil
Marinade for Chicken:
1 Tbsp avocado oil
2-3 tsp Kinder’s Salt, Pepper, Garlic seasoning
1/2 tsp cumin
1 tsp paprika
1 tsp cayenne pepper
1 tsp chili powder

Cooking Instructions:
Begin by finely dicing up two chicken breasts and in a mixing bowl add all the ingredients above for the marinade in the bowl with chicken and mix it up. Cover and place in fridge for about 10-15 min. Preheat a pan on med heat for 3 min and add 1-2 tbsp to your pan. Add chicken in pan and cook until lightly browned and cooked through. Remove chicken from pan and wipe out pan with paper towel, then add about a tsp of avocado oil to hot pan. Place a tortilla in the pan and add chicken and cheese on one half of the tortilla. Fold tortilla over and continue frying for about 1 min until crispy, then flip and repeat on the other side. Remove taco from heat and add in your favorite toppings. Enjoy!
