Ingredients:

Corn Salsa:

Can of corn
3 tbsp chopped cilantro
3 tbsp diced red onion
1 tsp kosher salt
Juice of one lime

Guacamole:

2 Haas Avocados mashed
3 tbsp diced red onion
1 diced jalapeno
3 tbsp chopped cilantro
1 tsp kosher salt
Juice of one lime

Marinade for Chicken:

2 tbsp diced onion
2 tbsp chopped cilantro
1 tbsp Kinder’s SPG
1 tsp paprika
1/2 tsp cayenne pepper
1 tsp chili powder
1/2 tsp cumin
1/4 cup avocado oil (You can add salt to taste if you feel it needs it)

Cilantro Lime Rice:

1 cup of white rice cooked
Juice of one lime
1 tbsp unsalted butter
1 small handful of cilantro
1 tsp kosher salt

Black Beans:

1 can of black beans
Juice of half a lime
1/2 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp kosher salt
1/2 tsp black pepper


Cooking Instructions:
Mix a can of corn, cilantro, onion, salt, lime and you have corn salsa. Mix together avocados, onion, jalapeno, cilantro, salt, lime and you have the guac. In a bowl add Onion, cilantro, Kinder’s SPG, paprika, Cayenne pepper, chili powder, cumin, avocado oil then mix and pour over thin sliced chicken breasts or thighs. Cover or put in ziplock bag and marinate in fridge for 30 minutes. Add butter, cilantro, lime juice, and salt to cooked rice then mix. Saute peppers and onions with a little salt. Start with a can of black beans and add lime juice , chili powder, garlic powder, onion powder, salt and pepper then microwave for 2 minutes. Grill the chicken and let it rest for 10 minutes. Grab your bowl and fill with rice, beans, fajita veggies, chicken, corn salsa, your favorite tomato salsa, guacamole, sour cream, and jack cheese. If you love Chipotle this one’s for you!!
