Ingredients:

Low carb tortilla
Pizza sauce
Provolone cheese
Pepperonis
Red pepper flakes
Pecorino Romano cheese


Cooking Instructions:
In a medium hot pan add some pepperonis in a circle about the size of the tortilla you will be using; let them fry for a minute. Add in a couple slices of provolone cheese and top with a tbsp or two of pizza sauce. Set your low carb tortilla on top and apply light pressure with a spatula to make sure it all sticks to the other side of the tortilla. After about 1-2 minutes put a plate face down on top of the pan and flip over until the pizza is on the plate. Then slide the pizza, toppings side up, into the pan so the bottom can get slightly crispy. After a minute or two slide onto plate and fold in half like a quesadilla. Let cool and enjoy!
