Ingredients:
Pork shoulder/butt
BBQ seasoning
Yellow Mustard
Brown sugar
Unsalted butter
Apple juice
Cooking Instructions:
Score fat cap on bottom of pork shoulder in a cris-cross pattern. Rub pork shoulder with yellow mustard as a binder. Apply your favorite bbq rub liberally on outside of pork and let rest and soak in seasoning for 20 mini. Preheat your smoker to 250 deg F. Once preheated put in pulled pork fat side down. Check your pork every hour until you hit 165 deg F internal (takes about 4-5 hours). Once 165 is achieved remove pork shoulder and put into a foil container. Pour a little bit of apple juice in bottom of container and top the pork with pads of butter and brown sugar. Cover with foil and put back in smoker and continue to cook until 200-205 internal temp (about 1 1/2-2 more hours). Remove pork shoulder and let rest for 45 min - 1 hour. Unwrap pork and it should just pull right apart; the bone should pull out clean. Add your favorite bbq sauce and mix it up. Put on sandwich rolls or tacos or however you want to use it. Enjoy!
