Ingredients:
Spread/Burger Sauce:
1 cup of mayo
6 tbsp ketchup
4 tbsp sweet pickle relish
1 tbsp distilled white vinegar
Burgers:
2 lbs ground beef (Must be 80/20) (Makes about 10 patties)
1.5-2 tbsp Kosher salt
1.5-2 tbsp black pepper
Iceberg lettuce chunked
American cheese slices
Dill pickle chips
Yellow mustard
Diced yellow onions
Sliced tomatoes seasoned with salt and pepper
Unsalted butter for toasting the buns

Cooking Instructions:
Begin by making the spread/sauce by mixing mayo, ketchup, sweet pickle relish, and distilled white vinegar in a bowl, cover and refrigerate for about an hour before using. Dice up yellow onions, thin slice a tomato then salt and pepper them, and chunk the lettuce by separating it with your hands. Mix the ground beef with kosher salt and black pepper then use a 1/3 measuring cup and stuff it with the beef, pop out the burger and put on wax paper lined tray and repeat until you have all of your patties. Using a pan or griddle top put a little oil or butter on low heat and start caramelizing the onions (this process takes a while so be patient, maybe 20-30 min). Add a little butter to the griddle and turn up the heat to medium and toast the brioche buns on the cut sides only. Remove the buns once toasted and set aside. Prepare the bottom bun by adding some burger spread/sauce, pickles, slice of tomato, and chunk of lettuce (in that order). Head back to the griddle turn heat to medium high, lay down two patties and smash them until thin using your spatula and some parchment paper to prevent sticking. Cook for about 2 min on one side until a little char appears. Add a squirt of mustard on the uncooked side of each patty and flip them over. Add a slice of American cheese on each patty then a healthy spoonful of caramelized onion on one patty. After about 1-2 more min put the patty with no onions on top of the patty with the onions, so the onions are in the middle of the two patties. Put your top patty on and using your spatula set the burgers on top the the bottom bun that is already built with condiments. Enjoy!
