Cooking Instructions:
Begin by preheating your smoker or oven (I prefer the smoker) to 250 deg F. Score the fat on your pork shoulder/butt rub on some yellow mustard as a binder then liberally coat the entire pork shoulder with your favorite BBQ rub. Let sit for about 30 min before putting it in the smoker. Cook to an internal temperature of 165 deg F (It usually takes about 4-5 hours, however cook to temperature, not time). Put pork shoulder in an aluminum tray and pour in a couple cups of apple juice, sprinkle on some brown sugar, more BBQ rub and a few pats of butter; cover with foil and put back in smoker/oven until you hit 203 deg F internal (Usually around 2 more hours). Remove from smoker/oven and let rest covered for 30-45 min. Pull the pork and put on a King's Hawaiian slider, top with coleslaw (Recipe above) and a little splash of your favorite BBQ sauce. Enjoy!
