Cooking Instructions:
Begin by trimming any silver skin off of the pork and pre-heating your smoker (or oven) to 250 deg F. Pat dry the tenderloin with a paper towel. Inject the pork with apple juice in about 4-5 places along the tenderloin. Next, rub yellow mustard on the pork coating the entire tenderloin on all sides. Apply your favorite BBQ rub by completely coating the tenderloin. Let the tenderloin rest for 20 min before putting on the smoker. Put your pork tenderloin in the smoker. Smoke until internal temp reaches 135 deg F (If you like it more cooked, go for it). Once your pork hits that 135 deg temp brush on a coating of BBQ sauce and continue smoking until you reach 145 deg F (medium). The smoking process usually takes about 45 min - 1 hour. Once you hit 145 deg remove from the smoker and let them rest for 20 min before slicing. To build your sliders, start with a King's Hawaiian slider roll and add BBQ sauce, yellow mustard, sliced pork tenderloin, sliced pineapple, sliced red onion, and Cholula hot sauce. Enjoy!
